Homemade Vanilla Icecream with Vin Santo
1 vanilla bean
4 egg yolks
200ml double cream
Few grains of salt
1/2cup Vin Santo
• Heat up the milk with the vanilla paste and pod till nearly at boiling point. Take off heat, cover with lid and leave to rest. Meanwhile, place all other ingredients in a mixer (I use my KitchenAid) and whisk away!
• Pour in a churner (I have an ancient Gaggia Gelateria) and wait for the magic to happen!
NOTE: Use any wine or alcohol of choice. Italian dessert wine, Vin Santo, seems to enhance the taste of the vanilla in a very subtle way!
